Recent Culinary Industry Stats
Food service managers held over 450,000 jobs in the year 2000 (which is the year this study was published). For this study, most managers were salaried, with one in three being self employed. In most cases, self-employed managers realized higher salaries than employed managers. Here are some examples of the median annual earnings one can expect in the culinary industry:

Miscellaneous amusement and recreation services: $37,000
Hotels and motels: $36,460
Nursing and personal care facilities: $31,400
Eating and drinking places: $31,380
Elementary and secondary schools: $28,310

One of the findings of the study was that most food service management companies and national or regional restaurant chains recruit management trainees from two and four year college hospitality management programs. However, while most food service and restaurant chains prefer to hire people with degrees in restaurant and institutional food service management, they often hire graduates with degrees in other fields who have demonstrated interest and aptitude.
